RECIPE

1 16-oz. can of chickpeas or garbanzo beans
¼ cup liquid from can of chickpeas
3-5 tablespoons lemon or lime juice (depending on taste)
1½ tablespoons tahini (optional)
2-4 cloves garlic peeled and crushed (yum!)
½ teaspoon salt
2-3 tablespoons olive oil
1 package of whole wheat pita bread circles
A variety of vegetables

DIRECTIONS: Open the can of chickpeas and drain, reserving the liquid. Place the chickpeas in your blender or food processor along with the lemon juice, tahini, garlic, and salt. Turn on your blender and slowly pour in the ¼ cup liquid reserved from the chickpeas. Let your blender run until a paste forms and there are no visible chunks of chickpeas. Next, slowly add the olive oil. Let the blender go for at least 2 minutes. Adjust your seasonings. Remove the hummus with a soft spatula and place in a bowl.
